I know it popped into almost everyone's minds that Cadence, being an alicorn, is most likely immortal (or some kind of longer-than-normal-ponies life span) so Shining Armor's mortality is in question with their relationship. I like to think it's true love until the very end. :)

This may not be the case necessarily. Perhaps immortality only applies to some alicorns, or is an optional trait. For example, we saw cadence age at a natural pace based off the flashbacks in canterlot wedding. If a creature has a long life span, wouldn't it take a lot longer to go from teen years to full on adulthood?

Well that can be subverted by an immortal person being born and going through generic adolescence like a mortal, but once they reach a mature body, they just stay with that. I think some vampire stories use this method as well as many stories involving half-angel people or children of gods. The most common idea I'm leaning more and more towards is that only Luna and Celestia are immortal because their souls are tied with heavenly bodies. I really hope it's addressed in S4.

Gotta admit, I always thought she wasn't immortal since in the second season there's an older and younger version of her

I can imagine they did that to make it seem more appropriate for a teen Shining Armor to be with her. Though, since she's the Crystal Empire's princess we can assume that either she's been around for at LEAST 1000 years, aging slowly, and Shining Armor just happen to meet her right before she blossomed into an adult OR she escaped/was thrown out of the Empire some 15 to 20 years ago, possibly to get help or something, and has been aging normally since then.

This picture is only in the event that all alicorns are immortal, it's very possible that this is just a Celestia/Luna thing because of their magical connection to the sun/moon.
